From Anne Keeber, Lebanon yogini

  • 1 lb. dry pasta (spaghetti works fine)
  • 1/3 – 1/2 c peanut butter either crunchy or smooth
  • 1 T Bragg’s Liquid Amino’s or Soy Sauce
  • 1 T or more Tahini
  • 1 t. vegetarian Worcestershire Sauce (you can get this in the health food section at Kroger)
  • 2 or more cloves garlic, minced
  • Cayenne, salt, black pepper to taste
  • Hot water as needed

GARNISH

  • Scallions, sliced
  • Sesame seeds

OPTIONAL VEGGIES

  • Bean sprouts raw
  • Pea pods raw or cooked crispy-tender
  • Carrot cooked crispy-tender
  • Broccoli cooked fresh or frozen bite sized

Boil a pot of water and cook the noodles.  While they cook, mix up the rest of the ingredients in a large serving bowl, adding the hot water last to thin out the peanut sauce to a consistency that will stick to the noodles and cover them all. 

Drain the noodles and add them to the bowl with any of the optional ingredients you want to use.   Serve garnished with sliced scallions and sesame seeds

Delish!  Make it as spicy as you like.  The added veggies make this a main dish.  With a salad it’s a satisfying dinner.  Leftovers will warm up well in the microwave with a teaspoon or less of water in a covered bowl. ~ Anne
