Breakfast

This recipe was inspired by a trip I took to Esalon in Big Sur California.  They make the best homemade granola that you will ever taste.  In fact, I’ve never liked granola until I tried it there.  My kids eat this every morning with a little yogurt, fresh fruit and dried fruit mixed in.  

In a bowl:

  • 1 32 ounce bag of rolled oats
  • 1 cup of rye flakes (find them at whole foods or jungle jims)
  • 2 cups of your favorite nuts (I’d put some almonds in for sure)
  • 3/4 cup of you favorite seeds (sunflower, sesame…whatever you love)
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon iodized sea salt

In a pot on low heat:

  • 1/2 cup honey
  • 1 cup of maple syrup
  • 1/2 cup of canola oil
  • 3 tablespoons brown sugar
  • 3 tablespoons of vanilla

Once the pot of ingredients is melted together, pour over the dry ingredients and mix up.

Make a layer of the granola on a cookie sheet.

Place it in a 325-degree oven.  Every 10 minutes open the door and flip the granola for the next hour or so.  It may go quicker depending on how thick the layer of granola is.  You will smell a yummy smell when it is done. 

Let it cool and put it in an airtight zippie bag!  

Spices help you digest your food.  Spice up your granola…allspice, nutmeg, cinnamon, and a touch of sea salt. Om, Pamela
