Hummus is a delicious and healthy snack. Use it as a dip or spread it on a pita and make a veggie sandwich. If you are a Vata or Kapha, be sure to blanch your veggies before you dip them! It helps to “pre-digest” the raw food and will keep you from diminishing your digestive fire.


2 (15 ounce) cans garbanzo beans, undrained
3 small garlic cloves
1/4 cup plus 1 tablespoon tahini (sesame seed paste)
1/4 cup fresh lemon juice
3 tablespoons water

Drain garbanzo beans, reserving 1/4 cup of liquid and set aside.  Process garlic in a food processor until minced.  Add the beans, liquid and remaining ingredients and process until smooth.

NOTE:  you may have to thin with water. Using stock instead of water gives it a nice flavor.  Consider adding diced peppers.  Decorate with paprika (Hungarian paprika is spicy).
