This recipe comes to us from Ellen Hall, Yogi and Green Irene Consultant

  1. 1 T olive oil
  2. 1/2 T red wine vinegar
  3. 1 large garlic clove
  4. 1 T fresh parsley
  5. 1/2 t fresh oregano
  6. 2 plum tomatoes, seeded & chopped
  7. 1/2 cup chopped red onion
  8. 1 avocado
  9. 4 oz. feta cheese

Whisk together first five ingredients.  Chop tomatoes, onion & avocado and place in medium bowl.  Pour dressingover tomato mixture, add cheese and toss gently.  Serve with fresh pita or pita chips.

Cheese in Ayurveda is considered tamasic. Anything that is tamasic is creating dullness in the body and mind. To minimize this, when choosing cheeses, go for the soft cheeses like feta, goat, cottage, and Brie. They are easier to digest and less tamasic. This recipe is great because the garlic, vinegar, and onion are all working to facilitate digestion. Om, Pamela
