This delicious recipe is from Amy Woodbridge:

Clean and remove stems from 12 ounces of medium sized mushroom (button or the like).  Place the mushrooms on a lightly greased (with olive oil) roasting pan or baking dish with bottom side up so you can stuff them.  Preheat oven to 400 degrees.

Ingredients:

1/4 cup olive oil

Dash of pepper

1/2 cup diced red pepper

1/4 cup diced green onion

1/4 cup diced green olives

1/4 cup parmesan cheese ground or shredded

1/4 cup crumbled feta cheese

Direction:

In a medium bowl combine all ingredients well and then stuff the mushroom caps with plenty of the filling.
Bake in 400 degree oven for 20 minutes or until mushrooms are tender.
