This recipe is a creation of Anne Keebler:

Ingredients:

1 large head Garlic
1 T finely chopped fresh Rosemary
1 T olive oil
4 large sweet potatoes, peeled and diced (8 c)
2 large apples, peeled and diced (2 c)
2 t salt
1 t balsamic vinegar

Directions:

Preheat oven to 375 degrees, cut tops off the garlic exposing cloves.  Place on a piece of foil, and top with the rosemary.  Drizzle with the olive oil.  Wrap loosely with the foil and bake 50 to 60 minutes, or until soft and golden.

Place sweet potatoes and apples in a pot with enough water to cover.  Add salt and bring to a boil.  Cover and simmer 10 minutes. Or until potatoes are soft.

Drain and reserve 1 c. cooking liquid.  Transfer to serving bowl.
