• 1/2 cup split red lentils
  • 2 onions, peeled and chopped
  • 1 cup potato or squash pealed and cut into chunks
  • 1 spicy pepper (green Chile will do)
  • Water to cover (or Veggie Broth is even better)
  • 1 tsp. turmeric
  • 2/3 cup fresh spinach
  • 2 tomatoes chopped
  • 2 tbsp. sesame or olive oil
  • 1 tsp. mustard seed
  • A few curry leaves

Rinse your lentils and then put in a pan with onions, potatoes or squash, hot pepper, turmeric and water to cover by about an inch.  Bring all to a boil and reduce heat.  Cover and simmer until the lentils are tender and the water is absorbed (You Must Watch the Pot and ADD Water if necessary)
