- 1/2 cup split red lentils
- 2 onions, peeled and chopped
- 1 cup potato or squash pealed and cut into chunks
- 1 spicy pepper (green Chile will do)
- Water to cover (or Veggie Broth is even better)
- 1 tsp. turmeric
- 2/3 cup fresh spinach
- 2 tomatoes chopped
- 2 tbsp. sesame or olive oil
- 1 tsp. mustard seed
- A few curry leaves
Rinse your lentils and then put in a pan with onions, potatoes or squash, hot pepper, turmeric and water to cover by about an inch. Bring all to a boil and reduce heat. Cover and simmer until the lentils are tender and the water is absorbed (You Must Watch the Pot and ADD Water if necessary)
