For the Dressing:
- 3 Tbsp. soy sauce
- 2 tsp. rice vinegar
- 2 tsp. sesame oil
- 1 Tbsp. minced garlic
- 2 Tbsp. water
- ½ tsp. hot sauce – optional
For the salad:
- 12 oz. cooked soba noodles
- ¼ of a red onion, thinly sliced
- ¼ cup sliced mushrooms
- 3 Tbsp. chopped cilantro
- Sesame seeds
*In a medium bowl, whisk together the dressing ingredients. Add all the remaining salad ingredients to the dressing, and toss. Top with as many sesame seeds as you prefer. Cover and chill for at least 1 hour…. enjoy!
