Vegan Asian Lettuce Wraps, by Kimberley Shroyer, Sage Woman, Shamanic Priestess, and Yogini 

Ingredients

  • 1-2 T peanut oil (for stir frying)
  • 2-3 cloves chopped garlic
  • 1 T chopped ginger

Sauté in pan until fragrant but garlic not burned

Add to stir-fry

  • 2 cups shredded carrots
  • 2 cups shredded cabbage
  • 1 cup sliced shitake mushrooms
  • 1 can chopped water chestnuts


Stir-fry until cooked but still crisp… add organinc soy sauce. Peanut sauce, to taste… add 1 tsp red chili pepper sauce and ½ fresh lime juice.    …

Add in a bag of bean sprouts and a T each of fresh mint, cilantro and basil… season with salt and pepper

I also garnish with chopped pistachios.

Serve with iceberg lettuce leafs…
