breakfast_dahlBeans for breakfast? You bet. This bean dish is better than oatmeal and will give you a great sweet start to your day.

To prepare Breakfast Dahl you’ll need:

  • 1 cup Dahl (I choose the smallest lightest color for this)
  • 2 cans light coconut milk
  • 2 Granny Smith apples
  • 1/4 cup dried fruit of your choice (raisins, cranberries, prunes, plums)
  • 1/4 cup organic brown sugar
  • 2 tablespoons diced ginger
  • 2 cloves diced garlic (that’s right!)
  • Juice of one lime
  • 1 tablespoon turmeric
  • Salt to taste
  • Cinnamon to taste

Put all of this in a small pot on the stove together. Bring to a boil. Cover and reduce to simmer. Check on it occasionally for the next 30 minutes adding more coconut milk as needed. If you want to turn this into a complete protein, simply add one cup of rice and two more cups of liquid.
